Hey man, thanks for the comment. In response to your question, I actually cut and tape double page spreads together, then draw on the two pages as one big board, then I scan them in two parts. If everything is taped up and aligned right on the physical board, you should be able to light them up in phototshop easily. Just make sure you do all the work on the real boards first.
